1. Soak dried peas according to package instructions, then rinse. Place in a large stock pot with 5 1/2 cups water.

2. Saute onion in a skillet over medium heat until it starts to turn translucent, add garlic and saute for 2 to 3 minutes more until garlic is fragrant. Remove from heat and add to peas in pot. Add all other ingredients and cook on simmer for 1 1/2 to 2 hours (until peas are tender).

3. Serve with cornbread or over cooked rice. Make this a one-pot meal with additional options such as green beans, chopped kale or other firm greens that could be added in the last 30 minutes of cooking.
* 1 lb Dried Black-eyed Peas
* 5 1/2 Cups Water
* 1 medium Sweet Onion, diced
* 3 cloves fresh Garlic, diced
* 1/2 tsp cracked Black Pepper
* 1 Tbsp Chicken Bouillon
* 1 Bay Leaf
* 1 tsp Coriander Powder
* 1 Tbsp Comino Powder
* 1 Tbsp Shiro Miso (mild, yellow)
* 1/2 Tbsp Fish Sauce
* 2 Tbsp Mushroom Soy Sauce
* 2 Cups Smoked Ham, diced, or Smoked Ham Hock
* 1 tsp Gochujang or Sriracha Chili Sauce (optional glow factor)
* 1 tsp Agave, if needed
* Optional: Green Beans, Kale, cooked Rice
