This little appetizer is delicious, with great textural layers of flavor as well as rich delicate Shrimp notes on the palate. You can use shrimp or lobster, but after a thousand cycles in Super Bass-O-matic with cream cheese and spices, faux crab works just fine and is easier on the budget.

1. Combine the surimi, egg, egg white, green onions, cilantro, garlic, salt, and white pepper in a food processor and process until blended but still slightly chunky. Add the cream cheese and pulse until smooth and thick. Add the cream and pulse just until blended, being careful not to over process.

2. Heat broiler. Working in 2 batches, toast bread slices on a rimmed baking sheet 8 inches from heat source until golden brown, about 30 seconds. Remove from oven.

3. Flip bread over, generously brush tops with butter, and spread with a thin layer of seafood paste. Broil until seafood mixture is bubbly and toasts are browned.

4. Quick party prep tip: Since surimi is pre-cooked, prepare seafood paste up to 24 hours in advance. Keep refrigerated until ready to use.

5. Wine suggestions: Chardonnay, White Rioja, Sparkling Wine.
* 12 ounces Surimi (faux crab), cut in large pieces
* 1 large Egg + 1 large Egg White
* 3 Tbsp. chopped Green Onions, soft greens only

* 4 ounces Cream Cheese, cut into pieces
* 1/4 cup Heavy Cream
* 1 medium crusty Baguette, such as Country French or Sourdough, in 1/4-inch slices
* 4-6 Tbsp. melted butter for broiling
