"Delicious!" is the number one response we get to this crazy good, crazy easy dish. No one misses dinner at our house when this stir fry is on the menu. Cat uses soba noodles in this (lower carbs and higher fiber than other noodles) and not a single teenager has ever complained.

1. Bring a large pot of water to boil. Add the noodles and cook according to package directions. Drain and rinse in cold water. Set aside until step 5.

2. While water is heating, combine the teriyaki sauce, orange juice concentrate and peanut butter in a small bowl. Stir until the mixture is smooth. Set aside until step 5.

3. As you continue to wait for water to boil, heat a large deep-sided pan or wok over high heat. Season meat with salt to taste. Add 2 tbsp wok oil and meat. Cook until meat is light golden brown and almost cooked through, about 3 minutes. Transfer meat to a platter or large pan; cover with foil to keep warm.

4. Return pan to heat. Add additional wok oil and onions. Sauté until almost translucent. Add diced pineapple and carrot shreds. Sauté 2 to 3 minutes more until pineapple begins to soften.

5. Return meat to pan. Add sugar snap peas and cooked noodles. Add sauce to pan and toss all to coat. Bring sauce to a simmer (2 to 3 minutes). Add water to thin, if needed.

6. Top with chopped basil and/or chopped peanuts, if desired. Allow guests to add Asian-style hot sauce as they prefer.
* 1 pkg Soba, Rice or Udon noodles
* 3 - 4 Tbsp Wok Oil (may use Peanut, Safflower, or Grapeseed)
* 1 1/2 lbs Pork Loin, Chicken Breasts or Asian-style Meatballs
* 1 Onion, cut in half from root to tip, then cut into slivers
* 1 (8 ounce) pkg Sugar Snap Peas
* 1 1/2 cups fresh Pineapple, diced
* 1 - 2 handfuls of Carrot shreds
* 1 cup fresh Basil, chopped (optional)
* 3 - 4 Tbsp roasted Peanuts, chopped (optional)
* 1 cup Teriyaki Sauce
* 3 Tbsp Orange Juice Concentrate
* 3 Tbsp Peanut Butter
* Asian-style Hot Sauce
